Naked Portafilters & why they rule.
The importance of the extraction to exceptional espresso reached a new level of clarity with the introduction of "bottomless portafilters".
A smart barista will intently watch the stream of espresso pour out during an extraction.
While appearance alone isn't definitive proof of a good cup, it does go a long way in verifying the barista's technique.
We can cut out your handles spouty area, leaving you with “naked” portafilters, and we carry a large range of brand new naked portafilters too.
Ideally, every particle of the ground espresso should be of the same size, and when compressed or tamped into the portafilter basket, it should likewise have no differences in how tightly or loosely it is compressed from side to side or top to bottom.
Although perfection in this regard is impossible, a Crotchless Portafilter can help identify things such as channeling, blonding, tiger striping, among other things.
Channeling is when the water finds it's way through cracks or small inconsistencies in the coffee "puck". This means that the coffee gets an uneven extraction, producing an inferior shot of espresso. Common causes are an uneven tamp, or too much coffee (referred to as overdosing).

Can you supply my cafe with coffee?
No, we are an independent coffee machine servicing company. Check out our friends on the links page to find a coffee roastery that best suits what you value. We will probably meet you at the machinery installation stage!

Do you do home/office calls?
Yes we do, there is no extra fee. We do however charge for the time spent travelling as labour.
How much is it for a service?
That all depends on what you would like done and the machine. Give us a call and we can give you an estimate.
Can you service my coffee companies clients around the country?
We can. Our service trips are split into areas of the country and happen at least every six month, in time for a new water filter. If you email us with the details of your company and requirements we will let you know when we are next heading to where you need us, it is that simple - info@espressoninja.co.nz
How much will it cost to get a machine installed?
That depends on the type of machine and where, but no matter what the job we can do it and offer advice on the filtration and government regulations.
Do you sell second hand machines?
We do, please head over to the store section and you will find second hand machines there if we have any for sale. They come with a six month warranty.
Do you work on a weekend/public holiday?
Yes we do however there is an extra charge for this as it is outside business hours. There is always someone available as we operate 24/7. If not, leave a message and we will definitely get back to you.
Do you fix automatic machinery?
We do repair a limited range of automatic machinery, please email or ring with the details and we can let you know.
Do you repair vending machines?
No we do not. Cafe Express are the best people to contact for those. 0800 22 333 9.

There are several important skills required to become a Ninja, you will need to master the following, and then email us a CV:

There is also a 12 week course in which you will be schooled in Feng Shui, meditation, Nunchaku and how to quickly determine which size socket you require for a bolt. After which you still wont be a Ninja, but you'll definitely be more awesome.
